Brambles Coffee and Raspberry Scones

One of our most popular coffee blends is Brambles, a natural and sundried process coffee from Santa Barbara, Brazil. With notes of raspberry jam and a roast level that falls somewhere between a darker light and a lighter medium, Brambles is a coffee that pairs perfectly with a wide range of foods.

One of our favorite pairings for Brambles is raspberry scones. The sweetness of the raspberry jam notes in the coffee complements the tartness of the raspberries in the scones, creating a perfect balance of flavors. Plus, the buttery, flaky texture of the scones provides a wonderful contrast to the rich, full-bodied taste of the coffee.

To make raspberry scones at home, follow this simple recipe:

Ingredients:

  • 2 cups all-purpose flour

  • 1/4 cup granulated sugar

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 6 tbsp unsalted butter, chilled and cubed

  • 1/2 cup fresh raspberries

  • 2/3 cup heavy cream

  • 1 large egg

  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Add the cubed butter and use a pastry cutter or your fingers to mix it into the flour mixture until it resembles coarse sand.

  4. Gently fold in the raspberries.

  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.

  6. Pour the wet ingredients into the dry ingredients and mix until just combined.

  7. Turn the dough out onto a floured surface and knead gently until it comes together.

  8. Pat the dough into a circle that is about 1 inch thick.

  9. Use a sharp knife to cut the dough into 8 wedges.

  10. Place the wedges on the prepared baking sheet, leaving space between them.

  11. Bake for 18-20 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean.

  12. Let the scones cool for a few minutes before serving with a fresh cup of Brambles coffee.
